Hutchies completed a full overhaul of the Sussex Hotel in Adelaide. We transformed the space while ensuring it remained open for locals. The project involved removing the dining room and courtyard, completely stripping out the front bar and commercial kitchen. Careful coordination ensured the pub stayed operational and safe for patrons, despite being surrounded by neighbouring businesses.

Sussex Hotel’s new dining room features skylights, gas fireplaces and retractable doors that open into a beer garden with checkerboard tiling. The beer garden has raised garden beds and mature plants. It features aluminium batten fencing, a rotating roof, and built-in fireplaces. These elements ensure comfort all year round.

The team refreshed the front bar with new paint, joinery, and fireplaces to create a warm, casual space. The sports bar was reconfigured to serve as the public bar, with a new layout, lighting and carpet for a relaxed feel.

The commercial kitchen now shines. It has stainless steel linings, non-slip flooring, and new appliances. A large opening near the entrance gives patrons a clear view into the kitchen.

External works included a new spoon drain, bitumen car park, wheel stops and line marking.

The result is a modern, welcoming venue that’s ready to serve Adelaide’s pubgoers for years to come.
